"Since it's a white soup, is this also tonkotsu?" When the menu says tori paitan, the main ingredient is chicken, not pork.
Tori paitan ramen uses a cloudy broth made with chicken. It offers a rich flavour, but styles vary between restaurants. Compare a bowl that highlights chicken flavour with one that incorporates vegetables for a potage-like texture.

鶏白湯 is pronounced tori paitan
In ramen terminology, the characters 白湯 are read paitan, not sayu, the word for plain warm drinking water. Paitan means a cloudy white broth and does not by itself specify chicken. Tori paitan is a cloudy broth made mainly with chicken.[S02]
Here, creamy and potage-like mainly describe texture. They do not guarantee that milk or cream is present or absent. Nor does the name tori paitan guarantee that a dish contains no pork ingredients: check the seasoning sauce and toppings as well as the broth.

For people who have the image of ``ramen being a bowl filled with large pieces of meat and vegetables,'' this is a candidate that will show you a different side. Enjoy the combinations by first tasting a small amount of the soup, then the noodles, and then the toppings.

Follow the restaurant’s guidance to choose among sarari, torori and poteri soup textures. These describe the mouthfeel, rather than chilli heat. The intuitive labels can help you think about the texture you prefer.[C07]
